Well besides that fact that it has been over a month since my last post...everything in the Mead house is amazing. Trace and Ruby have been keeping us busy busy and we have had the pleasure of having some pretty incredible weather....so we spend our time outdoors. We also moved into this century and signed up for high speed cable internet {although he looks like a hippy, my geeky technology obsessed hubby is SO excited} so it should be a lot less painless for me to actually write and post pictures to get back on track....since I know that everyone online has been wondering where the famous Imagine blogs have been, right?! So to inch back into the swing of things, because my kids are both sleeping at the same time and there are like 50 mile an hour winds today.....I made cookies and to do that I make my own brown sugar....and you should too! It is very easy, so much cheaper and SO much better than anything you can buy in the store.
You need:
1 cup of Sugar
1-2 Tablespoons of molasses {depending on how dark you want it to be}
I use blackstrap molasses and unrefined sugar

Put the two ingredients into a stand mixer with the whisk attachment
Whisk for about 10 minutes on a medium-high speed
It looks like it is not going to work until nearly the end so don't give up
Voila! Homemade brown sugar!
It keeps for just a long as conventional brown sugar if you keep it in an airtight container
It makes a world of difference to use homemade brown sugar
